Arugula, Fennel, Apple & Bacon Salad

Ingredients:

3 oz Hatfield Chef Signature Bacon (SKU: 2231), crisped and diced
Juice of 2 freshly squeezed Meyer lemon
2 Tbsp extra-virgin olive oil
Sea salt and freshly ground black pepper
3 cups baby arugula, trimmed and washed
1 small fennel bulb, thinly sliced, 1 1/2 cups
2 ea Granny Smith apples, peeled & julienned

 

 

 



Directions:

In a medium bowl whisk together the lemon juice and olive oil. Season the salad with salt, and pepper, to taste. Put the arugula, apple, bacon and fennel into a large bowl and toss until well coated
