Bacon Phyllo Blossoms


1 roll phyllo sheets (thaw following instructions on the package)
Fully Cooked Bacon Rounds (Item # 7605)
6 eggs
8oz package shredded cheddar cheese

 Optional items:

Spinach, tomato, sautéed mushrooms, peppers, onions, feta cheese, mozzarella cheese (these items can be added prior to cracking the egg).


Preheat oven to 350°F.

Unroll and cover the phyllo pastry with a damp towel or plastic wrap to prevent drying out.

Place one sheet of phyllo on cutting board and lightly coat with cooking spray. Layer another sheet of phyllo on top, place 6 pieces of bacon rounds on top of the two layers and repeat the phyllo layer process again (using a total of 4 sheets of phyllo).

Cut the phyllo about 1” larger than the diameter of the cup or muffin pan, so the phyllo bacon circle is large enough to fill up the sides of the cavity.

Crack an egg in each phyllo cavity and place in the oven bake for 15-20 minutes.  Once the phyllo blossoms come out, top with shredded cheddar and serve with your favorite breakfast potatoes or fresh fruit.
