Lip Smack’in Bacon Wrapped Prawns


1/2 lb Hatfield Chef Signature Bacon (SKU: 2231), partially cooked & cut in half
15 ea. U-15 shrimp (shelled & deveined)
1/2 cup BBQ sauce (open pit)
1/4 cup canola oil
2 Tbsp. lemon juice
1/2 oz.  Whole grain Dijon mustard
3 Tbsp. chipotle pepper in adobo (minced)
Freshly ground black pepper to taste
Sea salt to taste
5 ea. bamboo skewers (8" and soaked in water for 1 hr)


Partially cook the bacon & cut in half, allow the bacon to cool on paper towel. Wrap bacon around shrimp, and skewer with bamboo, Skewer 3 per bamboo.

Combine all remaining ingredients in vita prep or a bar blender and puree until well blended. Take 1/3 of the sauce away and use it to marinate the shrimp skewers. Reserve the remaining sauce to serve with the shrimp.

Cook shrimp skewers on a preheated grill over high heat for about 1 minute then reduce the heat to medium heat. Once the shrimp start to turn pink and the bacon is crispy remove from the grill add extra sauce and serve.
