Sausage Breakfast Burrito

Yield: Yield: 4 Servings


10 oz cooked sausage & black bean chili, use recipe above 
4 Tbsp. corn oil
8 eggs, beaten
½ small red onion, cut into small dice
½ red pepper, cut into small dice
½ cup sharp cheddar, shredded
4 flour tortillas
Red or Green Salsa, store bought, (optional)

4 ea lb Chef Master PA Dutch Sausage Links (SKU: 3124), left whole and roasted

8 Russet potatoes

1 white onion

1 clove garlic, smashed

Kosher salt or sea salt to taste

Freshly ground white pepper to taste

1/8 tsp. freshly grated nutmeg

3 eggs

2 Tbsp. potato starch

Extra-virgin olive oil

2 Tbsp. apple sauce

2 Tbsp. sour cream



In a large sauté pan over high heat add the oil, once the oil is hot add the onions and cook till translucent then add the peppers and cook for about 1 to 2 min or until the peppers are soft.. Pour the beaten eggs over the cook pepper & onion mix. Cook until eggs are cooked to your liking. Then add the chili and keep warm. Heat the flour tortillas and pour chili and eggs into each of 4 tortillas top with cheese and wrap tight. Cover with red or green salsa.
