Crostini of Italian Sausage, Fresh Mozzarella & Grilled Vegetables


1/2 lb Prima Porta Artisiano Sweet Italian Sausage Rope (SKU: 3858), cut into slivers
3 tsp. cup EVOO
1 small red onion (small thin slices)
1 medium zucchini (cut in 1/4 length wise and the in thin slices)
1 Large portobello mushroom (stem removed & gills scrapped)
1/2 lb fresh mozzarella (cut into slices)
1 loaf Italian bread (cut in to thin slices & toasted)
Sea salt & freshly cracked black pepper to taste

4 ea lb Chef Master PA Dutch Sausage Links (SKU: 3124), left whole and roasted

8 Russet potatoes

1 white onion

1 clove garlic, smashed

Kosher salt or sea salt to taste

Freshly ground white pepper to taste

1/8 tsp. freshly grated nutmeg

3 eggs

2 Tbsp. potato starch

Extra-virgin olive oil

2 Tbsp. apple sauce

2 Tbsp. sour cream



In a large stainless steel bowl toss the vegetables with olive oil & season with salt & pepper then grill until they are just tender, also grill the sausage slices and set aside keeping warm. Lay the toasted bread slices out on a sheet pan then layer each one with a slice of mushroom, zucchini, red onion, grilled sausage & fresh mozzarella and bake just until the cheese is melted. Arrange on a plate and drizzle with EVOO then serve.
