Sweet Italian Sausage Corn Bread Stuffing

Yield: Yield: 10 lbs stuffing


2 lbs Prima Porta Artisiano Sweet Italian Sausage Rope (SKU: 3858), small dice
1 qt chicken stock
1/4 cup olive oil
3 small onions, small dice
3 cloves garlic, minced
6 ribs of celery, small dice                                                                                                                                                                                                              2 small carrots, peeled, small dice
2 cups fresh corn kernels

6 loafs of cornbread, large dice
Sea salt and pepper to taste
1 bunch scallions, chopped
1/2 bunch fresh thyme leaves, chopped

4 ea lb Chef Master PA Dutch Sausage Links (SKU: 3124), left whole and roasted

8 Russet potatoes

1 white onion

1 clove garlic, smashed

Kosher salt or sea salt to taste

Freshly ground white pepper to taste

1/8 tsp. freshly grated nutmeg

3 eggs

2 Tbsp. potato starch

Extra-virgin olive oil

2 Tbsp. apple sauce

2 Tbsp. sour cream



In a saucepan over medium high heat,  heat oil and add onion, garlic, celery, carrot, corn and sausage; saute' for 10 minutes or until onions are translucent, stirring occasionally. Crumble corn bread into vegetable sausage mixture; add stock; stir until thoroughly mixed. Add salt, pepper. Stir in scallions and thyme. Remove from heat; set aside until ready to use.
