Corona Splashed Surf & Turf


6 oz Premium Reserve Pork Tenderloin (SKU: 1643) (cut into medallions)
6 oz Mahi Mahi
4 tbsp. Santa Fe seasoning
1 bottle Corona beer
1 mango
1 red onion
1 lime
Salt & pepper as needed

4 ea lb Chef Master PA Dutch Sausage Links (SKU: 3124), left whole and roasted

8 Russet potatoes

1 white onion

1 clove garlic, smashed

Kosher salt or sea salt to taste

Freshly ground white pepper to taste

1/8 tsp. freshly grated nutmeg

3 eggs

2 Tbsp. potato starch

Extra-virgin olive oil

2 Tbsp. apple sauce

2 Tbsp. sour cream



In separate containers, marinate the fish and pork with half of the seasoning and beer. Allow the pork to marinate for 2 hours and allow the fish to marinate for the last 45 minutes. Season the pork and fish well with the other half of the seasoning. Grill the fish and pork. Make the salsa by peeling the mango, chopping the onion, adding the lime juice and salt and pepper as needed. Top the fish and steak with the salsa.
