Dirty Martini CAB Pork Flat Iron


8 oz Premium Reserve Pork Flat Iron Steak (SKU: 1144)
2 tbsp. basil, citrus & garlic rub
3 oz stuffed queen olives
2 oz minced shallots
2 oz ìGlace de Porcî demi-glace   
1 oz butter

4 ea lb Chef Master PA Dutch Sausage Links (SKU: 3124), left whole and roasted

8 Russet potatoes

1 white onion

1 clove garlic, smashed

Kosher salt or sea salt to taste

Freshly ground white pepper to taste

1/8 tsp. freshly grated nutmeg

3 eggs

2 Tbsp. potato starch

Extra-virgin olive oil

2 Tbsp. apple sauce

2 Tbsp. sour cream



Season the steak well with the seasoning. Grill until desired doneness. Sweat shallots in pan and then add the demi-glace. Allow to simmer for 3 minutes. Whisk in the butter and then add the olives. Rest the steak. Plate and top with the sauce.
