Premium Pork Flat Iron Pork Milanese


14 oz Premium Reserve Pork Flat Iron Steak (SKU: 1144)
Italian bread crumbs seasoned with fresh Italian herb
1 fresh Jersey Plum Tomato, seeded and diced
1 clove of garlic, finely diced
1 oz extra virgin olive oil
Fresh Basil, cut into ribbons

4 ea lb Chef Master PA Dutch Sausage Links (SKU: 3124), left whole and roasted

8 Russet potatoes

1 white onion

1 clove garlic, smashed

Kosher salt or sea salt to taste

Freshly ground white pepper to taste

1/8 tsp. freshly grated nutmeg

3 eggs

2 Tbsp. potato starch

Extra-virgin olive oil

2 Tbsp. apple sauce

2 Tbsp. sour cream



Butterfly flat iron and lb evenly. Dredge in flour and egg. Coat steak in seasoned bread crumbs. Pre-heat saute' pan. Add 1 oz olive oil. Pan fry steak until nicely browned. Remove steak and hold. Add garlic, basil, and tomato to the pan for a quick saute'. Place steak over a bed of artisan lettuce and top with fresh tomato compote.
